Herb Grilled Chicken Breast
- Boneless chicken breast without the skin : 150 gm
- Olive oil (extra virgin) : 2 tsp (10gm)
- Cloves of garlic, minced : 2
- Thyme (dried) : ¼ tsp
- Oregano (dried) : ¼
- Ground black pepper: ¼ tsp
- Lemon zest : ¼ stp
- Salt : as per taste
Note: 1 cup = 200 ml, ½ cup = 100 ml, 1 tsp = 5 gm, 1 tbsp = 15 gm
*tsp = teaspoon, tbsp = tablespoon
- In a ziplock bag and lay the chicken flat inside and pound it gently using a rolling pin until it is around ½ inch thick. Take care not to hit it too hard.
- Mix all the other ingredients in a bowl and pour it to the ziplock bag. Seal and shake bag to, evenly coat chicken with herbed oil. Put the bag in the fridge, and allow it to rest for at least 4 - 5 hours to absorb the marinade.
- Once ready, pre-heat the oven. Lay the chicken top side down to an angle to the grill grates. Grill the chicken for atleast three minutes on each side until you get nice grill marks.
- Your juicy chicken is ready to enjoy.
