Vegetable Medley Stir Fry

Per Serving

  • Boiled broccoli florets: ¼ cup
  • Boiled french beans: ¼ cup
  • Baby tomatoes, chopped: 1 tbsp.
  • Sliced yellow Bell Pepper: 1 tbsp.
  • Onion Rings : 4-5
  • Chopped Lettuce: 2 tbsp.
  • Baby Spinach: 2 tbsp.
  • Ginger, grated : ¼ tsp
  • Garlic, chopped : ¼ tsp
  • Black Pepper : a pinch
  • Roasted flax seed : 1 tsp
  • Extra Virgin Olive Oil : 1 tsp

 

Note: 1 cup = 200 ml, ½ cup = 100 ml, 1 tsp = 5 gm, 1 tbsp = 15 gm

*tsp = teaspoon, tbsp = tablespoon

  • Heat olive oil in a pan over medium-high flame.
  • Add the chopped onion, yellow bell pepper, chopped garlic, and grated ginger to the pan and sauté until the onion is translucent.
  • Add the boiled broccoli and french beans and stir-fry for another 2 minutes.
  • Add the chopped baby tomatoes, lettuce and baby spinach to the pan and stir fry for another 2-3 minutes or until the vegetables are slightly wilted but still bright in colour.
  • Season with salt, black pepper, roasted flax seeds to taste.
